Sushi Gin (short for Ginza or Sushi on the Ginza) was conceived by Japanese native Saeko Tsunashima, who moved to this area from Tokyo in the early 90's. Her concept was to develop a restaurant similar to those she favored while growing up in and around Tokyo. The recipes for cooked food coming out of the kitchen and grill are essentially her own, with some inspiration from Oka-san (Mom), and she initially counted on sushi chefs to provide their culinary expertise. As time passed, Saeko-san learned considerable sushi skills as well, and now holds her own not only in the kitchen area but behind the bar as well. She consistently provides her creative skills to keep menu items fresh and ever changing.
Rick Symmonds met Ms. Tsunashima just before Sushi Gin's inception, and the two were married some time before the grand opening in Dec.1995. In the early days, Rick held down a day job as Seafood Manager in a grocery store, and assisted with front of house duties at the restaurant in the evenings. In 2000, he began full time work as a waiter/manager, by which time the restaurant had built a solid reputation as one of only a handful of authentic Japanese restaurants in the Greater K.C.area. Rick's formal position is as Head Waiter/Gen.Mgr.
